Happy Friday!! And even happier Friday of a long weekend 🙂
This week has been on and off sun and rain, and then more sun and rain!
Somehow its sunny during the day while I’m at work and then in the evening it rains like crazy. We’re talking thunder, lightening, hail… the works.
So! I’ve been reminiscing about warmth and our summer vacation a few weeks ago; especially our camping trip.
Basically this whole summer has been rainy but somehow we managed to plan a camping trip at just the right time and avoided rain… until the last day just as we were leaving, so it worked out perfectly!
We bought these extra comfy chairs that can recline, and then basically spent the entire time reading, eating, and going for walks. Talk about the perfect few days!
We cooked everything over the fire, which I was super proud of us for!
Breakfasts were the best: coffee, bacon and even monkey bread, all made over the fire! Yum!
Camping = relaxing. Nothing beats the peace and quiet.
Here’s hoping for sun this weekend!
Well. It’s summer time!! YAY!!
Which means camping… or atleast campfires!
And in my books campfires = s’mores
This year for our camping trip we decided to try something a bit different when in came to the s’mores.
About a month or two ago my husband showed me a picture of these icecream cones stuffed with chocolate and marshmallows, and that idea stuck in my head so I decided to give it a try!
Here’s what you need:
- Icecream cones (I went for waffle cones because they are way better than plain cones 🙂 )
- Chocolate of your choice
- Mini marshmallows
- Any other fun fillings
You can make so many different types of these campfire cones. I made four different kinds: reeses cups, oreo, m&m, and classic s’more.
It’s super simple. Take one waffle cone add in the fillings you would like… marshmallows, chocolate, etc. Then wrap the cone up with tinfoil! Done!
Take your pre-wrapped cones with you camping and set them on the grill of a fire pit for 5ish minutes (or until the marshmallows and chocolate are melted). And enjoy!!!
Yum!! These are a great twist on the classic s’more 🙂 And not to mention a whole lot less sticky to eat!
Taking it back to our adventures this past weekend.
We headed out to the beautiful mountains for some camping with friends:)
It was a bit chilly, but with a few extra layers on, it was perfect weather to have a camp fire!!!
And it turned out not being bad at all sleeping in a tent because we brought TONS of extra blankets ontop of having our sleeping bags!
The drive to the campsite was so pretty, right through the mountains.
And believe me, we ended up getting to see ALOT of the mountains because this camping trip turned into a bit of an adventure!!
Some friends left earlier to try to secure a camping site … apparently everyone planned to go camping this weekend!! I guess a bit of cool weather and rain/snow the day before doesn’t scare away Canadians!!
Long story short, 5 hrs of driving later, including some back and forth from campsites, we found some spots! Oh well, at least it was a beautiful drive and we had some snacks to make it more enjoyable 🙂
We got settled into our sites and started up a fire and it ended up being lots of fun 🙂
The highlight for me was passing by some moose on our drive home!!
I’ve never seen a moose in person!!
And now I’ve seen two 🙂 Pretty neat!!!

Rain, Rain go away…
Over the last few days its been pouring… and hailing.
We even lost electricity for a little bit on Tuesday evening. Such crazy weather!!
But we did get in some puddle jumping when the skies cleared up 🙂
So, today’s Throwback Thursday is back to when it was beautiful and sunny!!
Taking it back to just two weeks to when we went camping. Sunshine. Fresh air. Campfire cooking. S’mores. Catching up on reading. All the good stuff!! And I am pleased to say, not one single mosquito bite! We didn’t even have to use bug spray!!! And probably, the best part were these nutella and strawberry sandwiches we made with a cast-iron sandwich toaster. YUM!! We still have one camping trip planned before the end of summer, and believe me, we are packing the nutella and strawberries again!! Can’t wait!
