We had a super fun weekend, a definite highlight was carving pumpkins with friends 🙂 So fun!
But now its back to the regular rhythm of the week… which means coming up with meals.
Do you ever have those times where you haven’t gone grocery shopping for a while and you need to make something for dinner… so you have to scrounge around to see what you can find? That was me last night.
I ended up finding some ground beef, tomato sauce, and pasta. Everything I need for spaghetti and meatballs!!!
A major ‘go-to’ meal for us is pasta, its easy and always good.
In case you are looking for an easy meal for your Monday, here is my meatball recipe 🙂
This is what you need:
- a package of ground beef
- 1 egg yolk
- 4 tbsp of oats (I like to use oats instead of bread crumbs)
- 1 tsp Dijon mustard
- 2 tbsp BBQ sause
- 1/2 an onion (finely chopped)
- 5 tsp of spices (I used a mix of Italian spice, garlic and red pepper, steak spice)
Mix all of your ingredients together, and roll into balls.
Bake at 400 degrees Fahrenheit for 10-15 minutes or until they are cooked through.
Once your meatballs are all baked, add them into your noodles and tomato sauce. And you’ve got a yummy dinner!!
